​Carrot Cake


Cream:
           1 1/2 cups cooking oil
           2 cups sugar
           4 eggs, separated
           1 T hot water

Add:
           1 1/2 cups carrots, grated

Mix together:
           2 1/2 cups flour
           2 1/2 t cinnamon
           1 1/2 t soda
           1 1/2 t salt
           pecans (optional)
Add to 1st mixture 

Beat egg whites til stiff & add to mixture by folding in.
Pour into 3, 8" prepared cake pans.
Bake 350 for 30 minutes. Ice with cream cheese icing.

Icing:
           1 (8oz) pkg Cream Cheese
           1 stick Oleo, softened
           1 box Powdered Sugar
           2 t Vanilla

Beat all ingredients together well. Spread on cake.
